Lemony Yogurt Chia Pudding
This delicious recipe from Vail Health Behavioral Health's Dr. Eliza Klearman packs a lemony punch and makes for a super easy, go-to breakfast.
Ingredients
- 2 cups plain Greek yogurt
- 2 cups milk of your choice
- 2T honey
- 1 tsp vanilla extract
- Juice of 2 lemons (about 6T juice)
- ½ cup chia seeds
- Toppings of your choice (fruit, nuts, seeds, coconut, cacao nibs, etc.)
Directions
- Blend the yogurt, milk, honey, vanilla, and lemon juice in a blender.
- Place two tablespoons of chia seeds in 4 separate bowls or jars (2T/ jar). I like using glass jars with lids so I can shake them up and then just grab a jar when I am ready to eat.
- Divide your yogurt mixture into each of the jars and mix them well so that the chia seeds are distributed throughout the yogurt.
- Put on the lids, give a good shake for extra measure, and put them in the fridge. They should sit for at least 6 hours before eating, just to let the chia seeds plump, which makes for a nice, thick chia pudding.
- Top with whatever you want and enjoy!
